Ingredients:
Cooked Spaghetti Squash
1-2 cups Broccoli, shredded
1-2 cups Zucchini, shredded
1/2 cup grated parmesan or mozzarella or goat feta (lessen or increase by preference)
2 eggs
1 tsp garlic powder
1/4 tsp sea salt
Black pepper to taste
*You could try any variation of vegetables to add to the nests (cauliflower, greens, mushrooms, etc)
Method:
- Preheat oven to 400 convection
- Grease a non-stick muffin tin with coconut oil
- Spoon the spaghetti squash into each space, to form a shape of a nest
- Bake for 10-15 minutes on the upper rack and until the squash just starts to get "crisp" on the edge
- With a Starfit shredder or food processor grate the broccoli and zucchini.
- Beat 2 eggs and add to the veggies. Add the seasonings and cheese and mix together
- Remove the muffin tin and scoop the veggie mixture onto each nest
- Bake for another 10-12 minutes. Finish on broil for 1-2 minutes
- Allow to cool (if you can!) and scoop out the nests and enjoy!
