Raspberry Matcha Bites (adapted from Jill Carnahan's Raspberry Green Tea Lime Melties)
Ingredients:
3/4 cup coconut butter
1 tsp freshly grated organic lime peel, plus extra for garnish
2 Tbsp freshly squeezed lime juice (1 organic lime)
1/2 tsp vanilla extract
1 Tbsp raw honey
3 Tbsp hot melted coconut oil
Pinch sea salt
10 Fresh organic raspberries
1 tsp organic Japanese Matcha powder
Method:
Use 10 mini muffin cups and put 1 raspberry in the center of each cup
In a medium glass bowl combine all of the other ingredients except the coconut oil and matcha
Heat the coconut oil in a small saucepan and once melted pour into the the mixture of other ingredients. Whisk well
Add the match and continue to whisk until all ingredients are well combined
Cover each raspberry with the mixture (less than 1 Tbsp scoop)
Sprinkle the remainder lime zest on each
Freeze for 20 minutes. Serve chilled
