Ingredients:
· 1 ½ cup raw unsalted cashews
· 1 cup hemp seeds
· ¼ cup flaxseeds
· ¼ cup maple syrup
· 1 tsp vanilla extract
· ¼ tsp salt
· 1 cup dark chocolate chips (Enjoy Life is dairy and soy free). You can also use organic raw cacao nibs/chips and do a combo of both
Method:
1. In a high speed blender, grind the cashews, hemp seeds and flaxseeds to a fine flour consistency
2. Transfer to a mixing bowl and add the maple syrup, vanilla and sea salt. Mix to form a dough (I use latex gloves to make it less messy)
3. Add 1/3 cup of chocolate chips and mix
4. Press the dough into a pan lined with parchment paper. Chill for a few hours.
5. Melt the remaining 2/3 cup of chocolate chips
6. Pour onto the bars and spread to cover
7. Chill until the chocolate is set (approximately 4 hours)
8. Cut into squares and store in refrigerator and enjoy as a snack
